Lemon Grilled Chicken

I love Mediterranean food and this Lemon Grilled Chicken hits the mark! There’s just something about the cheese, olives, tzatziki, pita… mmmm! The best part is that it’s an easy type of food to eat healthier unlike all the Italian we love to eat as well.

This recipe is for a super easy chicken marinade that I use on bite size pieces of chicken and cook on skewers on the grill (well, my husband is the one who uses the grill… I’m personally not much of a fan of using them.)

Also, if it’s raining or you don’t have a grill these can still be done on skewers in the oven. Bake at 350 degrees and rotate every 10 minutes until cooked through.

My favorite way to eat this chicken is in a big bowl with spinach, feta cheese, kalamata olives, cucumber, tomato, seeds, and tzatziki.

For this Lemon Grilled Chicken recipe all you need to do is combine the chicken cut in bite sized pieces with the lemon juice, lemon zest, oregano, olive oil, and garlic salt. Let marinade for 20 minutes-8 hours. Skewer and grill!


Here’s my lunch today with the chicken in a salad. I didn’t have tzatziki to use in place of dressing so I drizzled it with a little olive oil and balsamic. One of the best parts of this recipe is that the chicken is great leftover either cold or reheated!

Lemon Grilled Chicken

  • Servings: 4-6

Delicious lemon grilled chicken.


  • 1 1/2 pounds chicken, cut in bite sized pieces
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 2 tsp oregano
  • 1 tsp garlic salt


  1. Combine all ingredients.
  2. Let marinate for 20 minutes- 8 hours.
  3. Put chicken on skewers.
  4. Grill until cooked through (internal temperature should reach 165 degrees).
  5. Enjoy!
